One of my favorite ways to eat jalapeno peppers is to take a couple of fresh peppers, cut the stem off, and take an old-style potato peeler (the “pointy” kind) and remove the core, ribs, and seeds through the open end. Slice the pepper vertically into two pieces. Fill the cavities with crunchy peanut butter. (Sometimes I add raisins on top for an ant-on-a-log twist.) The peanut butter kind of tames the heat so even people with a less tolerant palate enjoy them.

I also grind up fresh jalapeños up in a blender and use icecube trays to freeze them. Then put 4 or 5 cubes in a freezer bag. I have jalapeños all year long
