Preheat the oven to 400°F and combine all the Smoky Chipotle Sauce ingredients in a small bowl, cover and refrigerate. This will give a little extra time for the flavors to combine.
Pour diced potatoes into a large bowl, sprinkle packet of taco seasoning over the potatoes, and give them a good toss to fully coat. Then, add the vegetable oil and toss to coat.
Pour potatoes onto a parchment or foil lined baking sheet. Place in the oven for 30 minutes.
While the potatoes are cooking, warm up your tortillas by placing them in a frying pan over medium heat for about 1 minute per side, or until they just begin to brown. Store warmed tortillas in a tortilla warmer or under a clean kitchen towel.
After the potatoes are cooked allow them to cool for about 5 minutes and begin assembling your spicy tacos.
To assemble, coat the inside of each tortilla with the smoky chipotle sauce. Then, fill with the cooked potatoes. Add your desired toppings (see notes) and another drizzle of chipotle sauce and enjoy!
